One of our favourite beef recipes to create a classic dish at home!
𝐓𝐚𝐦𝐚𝐫𝐢𝐧𝐝 𝐌𝐞𝐥𝐚𝐥𝐞𝐮𝐤𝐚 𝐅𝐚𝐫𝐦 𝐁𝐞𝐞𝐟 𝐒𝐡𝐨𝐫𝐭 𝐑𝐢𝐛
Ingredients:
* 2kg Melaleuka Farm beef ribs
* 1L Chicken stock
* 130g Palm sugar
* 120g Tamarind pulp (soften in 125ml hot water for 30 mins then strain & use liquid the liquid only)
* 80ml (⅓ cup) Fish sauce
* 80ml (⅓ cup) Dark soy sauce
* Jasmine rice
FOR THE PASTE
* 40g each ginger, coarsely chopped
* 40g galangal, coarsely chopped
* 8 garlic cloves garlic, coarsely chopped
* 6 shallots
* 2 stalks lemongrass, coarsely chopped
* 2 coriander roots scraped
Method:
1. Pre-heat oven to 150 degrees
2. Seal ribs over medium-high heat turning until just browned. Transfer to a deep oven dish
2. Blitz up asian fragrant paste until finely chopped and saute off
3. Add stock, sugar, tamarind, fish sauce, soy sauce and pour over ribs
4. Cover with baking paper and foil and cook for approx 3 hours until tender
5. Skim fat from the top and discard
6. Serve with jasmine rice, kimchi, coriander, fresh chilli & peanuts to garnish
