A contemporary nose to tail (beef and lamb) driven dinner. Using our chefs innovation and ingenuity we will show you dishes you are familiar with in ways you may never have seen!
Expect traditional brawn, nduja, house cured salami, tartare, beef fat ice cream and more, all made with a modern twist.
Accompanied with an expertly paired drinks option for those that wish to immerse themselves in this wonderful “Paddock” themed dinner.
Presented by Executive chefs Brandyn Horsley and Nadia Malone (Melaleuka Farm) in collaboration with head chefs’ Daniel Lawrance (The Amberton), Matt Still (The Byford) & King Sy (The Wellard).
